Peanut Butter Cake

Hey. Hi. Hello.

Do you ever get in a funk? Just an unexplainable funk where you feel a little…off?
I do. In fact, I’ve been in a funk this whole week.

Luckily there are several remedies for this.
You can go for a walk.
You can listen to your favorite band.
You can watch any episode of How I Met Your Mother that includes a Slap Bet.
You can look up pictures of baby animals on the internet. (Is that just me?)
Or you can make this cake.
Because this cake is sure to get you out of any sort of bad mood. Trust me.

Recipe by Joy the Baker.
Makes one bundt cake or two 8″ cakes.

  • 2¼ cups AP flourBunt (1)
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ¾ cup creamy peanut butter
  • 6 tbsp. butter, softened
  • ½ cup sugar
  • ½ cup packed brown sugar
  • 3 eggs
  • 1 cup + 2 tbsp. buttermilk
  • 2 cups milk or dark chocolate
  • 2 cups heavy cream

Preheat oven to 350℉.
Cream butter, peanut butter, and sugars until fluffy. Add eggs one at a time, then scrape down bowl. Sift dry ingredients together, then add half to butter mixture. Add buttermilk, then add remaining dry ingredients. Pour into 2 greased 8″ pans (or 1 bundt cake pan). Bake 30-40 minutes.

For frosting: Bring cream to a light boil, then pour over chocolate. Let sit five minutes, then stir until completely smooth. Pour over cooled cake. (I wanted my ganache thinner, so I used about 2 cups heavy cream and 1-1½ cups chocolate.)
