Recipes and ramblings.
These muffins are super simple to make. I added coconut and chocolate chips (my personal favorite), but you can definitely tweak it and add whichever mix-ins you want. If coconut is not your thing, try something like chocolate chips and walnuts, or dried fruit and walnuts. Yum.
Preheat oven to 350℉.
Cream together sugar, eggs, vanilla, bananas, buttermilk, and melted butter until smooth. Mix in flour, baking powder, baking soda, salt, and cinnamon. Once completely incorporated, fold in coconut and chocolate chips (or mix-ins of your choice). Bake for 15 to 20 minutes.
And really, you should let them cool. But I have absolutely no self-control, and ate one directly out of the oven. Then I ate another.
